Irish colcannon is a comforting blend of creamy mashed potatoes and finely chopped kale, infused with the rich flavors of slow-cooked ham hock. Its velvety texture contrasts beautifully with the meat's tender bite, making it a satisfying dish to serve alongside a crisp green salad or a simple broth.

    Peel and cut the potatoes into even, medium-sized chunks. Put in a large pan filled with cold salted water, bring to the boil and cook for 10-15 mins until a knife can be inserted into the potatoes easily.
